The appliances differ in how they cool. Freezing-bowl makers need a bowl frozen in advance for several hours in the freezer; they are cheaper and prepare one batch. Models with a self-cooling compressor chill on their own and let you make several batches in a row without waiting — ideal for frequent use and larger amounts.
When choosing, look at the capacity (usually 1 to 2 litres), the power and the noise level. A timer, a transparent lid for watching the consistency and removable dishwasher-safe parts are all handy. Compressor models take up more room and cost more, but are more versatile.
The best results come from a well-chilled mixture — let the base rest in the fridge before churning. Serve the ice cream right away or let it firm up briefly in the freezer. Wash the bowl and paddle soon after use so leftovers do not dry on.
